Yummy Lentils

Turkish Bulger & Red Lentil Soup
Lentils are probably the cheapest and healthiest of proteins and red split lentils don't even need soaking. Dahl is the simplest way to use them.

My Simple Dahl Recipe
1. Fry 1 small chopped onion, 1 tsp garam masala & 1/2 tsp turmeric until browned.
2. Simmer 1 part red split lentils to 2 parts stock
3. Garnish with chopped coriander and serve with rice or flatbread

Dahl can be 'made runny' with extra stock or blended to make a soup. Hugh Fearnley-Whittingstall's Turkish Bulger & Red Lentil Soup is a very tasty version of this.

Sweet Potato, Spinach & Lentil Dahl
Dahl can also be used as the base for a great veg curry. I often make this Sweet Potato, Spinach & Lentil Dahl dish which is especially nice when made with homemade chicken stock.

Veggie Shepherd's Pie
Another great use for lentils in in either bulking up or replacing minced beef in dishes such as Spaghetti Bolognese or my favourite Veggie Shepherd's Pie.

They are just basically a great way to make a very frugal and healthy meal and I'm going to try and make 1 lentil meal each week
