Your Favourite Recipe

The Guardian has just publish a list of the 50 Top Easy to Medium Recipes from Tart Tatin and J Sheeky's Fish Pie to Anna del Conte's Lemon Risotto and Elizabeth David's Chocolate and Almond Cake.

Banana Breakfast Loaf
It made me wonder what is my all time favourite recipe, you know that one that becomes a family classic and you make time and time again. Mine would have to be this Banana Breakfast Loaf. It uses a mix of wholemeal and plain flour making it much more substantial and suitable for breakfast or a mid morning snack.

Over time I have added a generous teaspoon of cinnamon or mixed spice, substituted the butter for low-fat margarine and the 110g caster sugar for 35g dark muscovado, obmitted the pecens and lemon and played with different wholegrain flours. So my recipe is now...

My Banana Breakfast Loaf
75g I Can't Believe its not Butter Light (or other low-fat buttery margarine)
35g Dark Muscovado Sugar
100g Plain Flour
125g Wholemeal, Buckwheat or Spelt Flour
2 tsp Baking Powder
2 Eggs
4 Ripe Bananas
1 tsp Cinnamon or Mixed Spice

1. Mix the margarine, sugar and eggs
2. Pinch the bananas into segments as you add them to the bowl
3. Use a potato masher to mash the bananas into the mix
4. Add the flours, baking powder and spice, and mix
5. Bake at 170C for 40 minutes
