Once a fortnight I visit our local library and along with a couple of novels always borrow one of their many cookery books to take home and look over. This week I chose Easy Meals with Just 3 Ingredients by Jenny White. I was attracted by the promising simplicity of the title and was not disappointed, they are so simple in fact that some of the best dishes can be given in pretty much one line, so here goes...
Papya, Lime & Ginger Salad
One papaya sliced and dressed with a squeeze of lime juice and sliced stem ginger
Cantaloupe Melon with Grilled Strawberries
Half a cantaloupe melon served with 115g strawberries that have been halved, sprinkled with icing sugar and grilled
Curried Cauliflower Soup
One large cauliflower simmered in 750ml milk and 1 tbsp garam masla before blending into a soup and seasoned
Pea Soup with Garlic
1 crushed garlic clove and 900g frozen peas fried in butter and then simmered in 1.2L chicken stock before blending into a soup and seasoned.
Marinated Courgette & Flageolet Bean Salad
2 courgettes (zucchini) sliced and simmered until just tender mixed with 400g can of flageolet beans drained, 3tbsp garlic-infused oil and the grated rind and juice of 1 lemon before chilling for 30 min
Broccoli & Chilli Spaghetti
350g dried spaghetti and 450g broccoli cut into florets bolded, drained and mixed with 1 fat red chilli gently fried in 150ml garlic infused oil and seasoned
Baked Sweet Potatoes with Leeks & Gorgonzola
4 large sweet potatoes baked as usual before, cut in half and topped with 2 large leeks sliced and fried, and slices of Gorgonzola cheese before being grilled to finished off.
Minty Courgette Linguine
450g dried linguine cooked and mixed with 4 small courgettes (zucchini) sliced and fried until golden and a small bunch of mint chopped and seasoned
Linguine with Anchovies & Capers
450g dried linguine cooked and mixed with 8 anchovy fillets fried in 75ml garlic-infused oil and 2 tbsp salted capers, and seasoned
Roast Acorn Squash with Spinach & Gorgonzola
4 acorn squashes cut in half, drizzled wil oil, seasoned and roasted until tender then topped with sauteed spinach and slices of gorgonzola before returning to the oven for 10 min
